The food prep cabinet is dent resistant and has vertical hand-holds molded into the four corners of the cabinet. A polymer drip trough that functions as a bumper is mounted to the front of the cabinet. The full length door is equipped with a clear polycarbonate full view window, providing visibility of the contents of the cabinet without the heat loss associated with opening the door. Four holding modules are available for this 3 Series Cabinet: Holding, Moisture, Proofing, and Combination Proof and Hold. All feature an easy-to-read digital thermometer, recessed control dials, a master on/off switch, and power indicator lights. The module is removable, without tools, for easy cleaning of the cabinet interior. The cabinet has a switch that changes functionality from holding to proofing mode. Heat and humidity can be generated only at lower temperatures when in "Proof Mode". In "proofing mode", the cabinet shall have an operating temperature range of 80°F to 120°F and is able to generate 95% RH. Only heat, with no humidity, is generated when in "Hold Mode". In "holding mode", the cabinet has an operating temperature range of 80°F to 200°F.
